SWEET POTATOES WITH BANANA SOUR CREAM image

4 medium sweet potatoes
2 tbsp. olive oil
Sea salt
Ground black pepper
4 slices bacon, chopped
1 medium onion thinly sliced
1 Serrano chili thinly sliced
1 cup light sour cream
1 banana with peel
1/4 bunch chives or green onion tops chopped

Steps:

  • 1. Preheat oven to 400. Cut ends off sweet potatoes and cut each into eight wedges. Toss with olive oil and season with salt and pepper. Spread potatoes on a sheet pan with banana and roast in the oven. 2.in a sauté pan cook bacon until just turning crisp. Add the onion and chill slices to the pan. Cook until onion is caramelized and than turn off heat. 3. After banana has been in the oven for 10 to 15 minutes its skin should be black and its flesh should be very tender. Remove it from the oven, let cool, add banana to blender or processor with sour cream. Purée until smooth, add a pinch of salt. 4. After 30 minutes of roasting, the potatoes should be cooked and slightly brown on the edges. Transfer to a serving dish and top with onion, bacon, chili mixture. Garnish with chives. Serve with sour cream mixture.
