Sweet Potato Souffle image

This recipe is so simple & is such a good Thanksgiving side or a side for anytime!

Number Of Ingredients 8

2 lb sweet potatoes, can use canned (40 oz(2 lbs 8 0z) )
3/4 c granulated sugar
1 1/2 tsp baking powder
1 1/2 tsp vanilla extract
2 Tbsp flour
3 eggs, well beaten w/ele mixer
1 stick butter (room temp)
confectioner's sugar (optional)

Steps:

  • 1. Of course if you use canned potatoes skip this step. Boil unpeeled potatoes until very soft. Drain & peel, place in large mixing bow. While still warm add sugar, baking powder & vanilla. Beat with mixer until smooth.
  • 2. Add flour & mix well. Add whipped eggs & beat well then add butter & beat well.
  • 3. Pour mixture into a 2 qt. baking dish & bake for 1 hour or until top is light brown. Sprinkle with powdered sugar while warm if desired.
