Sweet Potato Snowballs image

This is a rather unique recipe for sweet potatoes that I came across in my cookbook from the nursing home. Staff and family members submitted their favorite recipes.

Number Of Ingredients 6

1/2 c brown sugar
1/2 tsp cinnamon
1 Tbsp butter
2 c cooked, mashed sweet potatoes
1 c shredded coconut
10 marshmallows

Steps:

  • 1. Blend sugar, cinnamon and butter with mashed sweet potatoes until smooth and well mixed.
  • 2. To form balls: Firmly coat each marshmallow with potato mixture until well covered. Then roll each potato ball in coconut.
  • 3. Put balls in buttered baking dish and bake at 350 degrees for 5-10 minutes or until marshmallow center is soft but NOT melted. These freeze well.

These are a great way to use up leftover sweet potatoes. I always have a few extra sweet potatoes after Thanksgiving and Christmas, so I make a batch of these snowballs to use them up.
