Sweet Potato Pineapple Pie image

My sis makes this every year and brings over for Thanksgiving dinner.

Number Of Ingredients 8

3 or 4 large sweet potatoes
1/4 cup evaporated milk
2 teaspoons vanilla
1 stick butter, melted
3 eggs beaten
1 1/2 cups sugar
1 small can crushed pineapple, drained
9 inch unbaked pie crust

Steps:

  • 1. Boil potatoes until tender. Peel potatoes while warm, put into a large bowl and mash.
  • 2. Preheat oven to 350. To potatoes, add rest of ingredients and stir well. Pour into unbaked crust. Bake 45 minutes until light brown.
