SWEET POTATO - ORANGE - APPLE CASSEROLE image

2 large, cooked sweet potatoes
2 cooking apples
1 tablespoon butter
1/2 tsp. cinnamon
1/2 cup orange juice

Steps:

  • Remove skins from 2 large, cooked sweet potatoes (about 1 1/2 pounds). Peel and slice 2 cooking apples. Slice sweet potatoes 1/2 inch thick. In a buttered 9 inch pie pan arrange layers of sweet potatoes and apples. Dot each layer with butter using about 1 tablespoon butter in all. Sprinkle over each layer this mixture made by combining: 1/2 tsp. cinnamon Pour over all 1/2 cup orange juice. Bake at 375 degrees for 15 minutes. Remove from oven and dot with an additional tablespoon butter. Return to oven and continue baking 15
