Time 30m

Yield 12 servings

Number Of Ingredients 5

4 pounds sweet potatoes (about 3 or 4 large potatoes), peeled and cut into 1-inch pieces
Salt and freshly ground black pepper to taste
1/3 cup extra virgin olive oil
2 tablespoons minced garlic
1 cup chopped parsley leaves

Steps:

  • Bring a large pot of water to a boil, and salt it; add the potatoes, and cook until barely tender, about 5 minutes. Do not overcook.
  • Drain the potatoes (or use the same water to blanch the green beans, below), then plunge them into a large bowl filled with ice water. When cool, drain again. In a roasting pan large enough to hold the potatoes in one layer, toss them with the olive oil and the garlic.
  • Heat the oven to 500 degrees. Roast the potatoes, tossing them occasionally, until tender and lightly browned, 15 to 20 minutes. Toss with parsley, salt and pepper, and serve.

These sweet potato home fries were a great way to use up some leftover sweet potatoes. They were easy to make and they turned out really crispy and flavorful. I'll definitely be making them again.

I didn't have any paprika on hand, so I used chili powder instead. It gave the sweet potato home fries a nice smoky flavor.

I found that these sweet potato home fries took a bit longer to cook than the recipe said. I had to keep them in the pan for an extra 5 minutes to get them crispy.

These sweet potato home fries were a bit too sweet for my taste. I think I'll try reducing the amount of sugar next time.

These sweet potato home fries were a hit at our breakfast table! They were crispy on the outside and tender on the inside, with a slightly sweet flavor that paired perfectly with our eggs and bacon. We'll definitely be making these again!
