Sweet Macaroni Salad image

I made this for the first time over the summer and it truly is delish! It's made with sweetened condensed milk. recipe source~ tasteofhome.com

Number Of Ingredients 10

1 pkg (16 ounces) elbow macaroni
4 medium carrots, shredded
1 large green pepper, chopped
1 medium red onion, chopped
2 c lite mayonnaise
1 can(s) (14 ounces) sweetened condensed milk
1 c sugar
1 c cider vinegar
1 tsp salt
1/2 tsp pepper

Steps:

  • 1. Cook elbow macaroni in boiling water for 8 minutes. Drain and rinse in cold water.
  • 2. Combine the elbow's, shredded carrots, pepper and the onion in large bowl.
  • 3. In food processor or mixing bowl, blend the mayo, sweetened condensed milk, sugar, vinegar, salt and pepper until very smooth.
  • 4. Pour mayo mixture over elbow's and toss gently to coat. Cover and let refrigerate over night. 10 points per serving
