Sweet Cuban Black Beans image

I took these to work and everyone loved them.

2 c dry black beans
2 bay leaves
1/4 c olive oil
1 large red bell pepper chopped
1 large onion chopped
6 clove garlic minced
1 Tbsp oregano
1 Tbsp cumin
1 c sugar
1/4 c sherry wine
1/2 red onion chopped
1/4 c fresh cilantro chopped

Steps:

  • 1. Soak beans in salted water to cover 3 inches overnight. Drain and place in a large soup pot with bay leaves and fresh water to cover 3 inches. Bring to a boil and reduce to a simmer and cook until beans are tender about 2 hours.
  • 2. After an hour and a half heat oil over medium heat and add bell pepper and onion and cook until tender about 7 minutes. Add garlic, oregano, and cumin.
  • 3. Place mixture in pan with beans and add sugar, sherry, and red onions. Cook another 30 minutes. Salt to taste and add cilantro.

I'm not sure what went wrong, but my beans turned out really dry. I think I might have overcooked them.
