Swedish Puff Pastry image

This is just something I grew up with. It is flaky, buttery, and delicious! My mother got this recipe from a neighbor lady when I was a very little girl. Even though she was Norwegian, she called it Swedish Puff! That made my mother smile (we are Swedish!) There was always some friendly joking between the Swedes and...

Number Of Ingredients 15

CRUST
1 c all purpose flour
1/2 c butter, softened
1 Tbsp water
PUFF
1 c water
1/2 c butter
1/2 c flour
3 large eggs
1 tsp almond extract
ICING
1 1/2 c powdered sugar
1/4 tsp almond extract
water, a few drops at a time
1/2 c sliced almonds

Steps:

  • 1. Mix crust ingredients as you would pie crust. (This is what the original recipe said but it is kind of like pie crust as the butter is soft.) Press into a pizza pan. Set aside.
  • 2. To make puff place 1 c. water and 1/2 c. butter into a saucepan. Bring to a boil. Remove from heat. Stir in remaining flour until a thick paste forms. Beat in eggs one at a time until well blended. Add 1 t. almond flavoring.
  • 3. Spread puff mixture over crust in the pizza pan. Bake at 350 degrees about 40-45 minutes until puffed and golden.
  • 4. Remove from oven and cool. Mix icing by adding remaining almond flavoring to powdered sugar. Add water, a few drops at a time, until icing is smooth and can be drizzled over pastry.
  • 5. Drizzle icing over pastry and sprinkle almonds over icing. Cut into squares (I know. Weird. It IS a round pan.) and serve with Swedish coffee. Or any coffee. We just always had Swedish.
  • 6. If you like, sprinkle a few well-drained, chopped maraschino cherries on with the almonds.
