Super Easy Chickpea Salad image

I love this salad! I can hardly wait the 2 hours to start digging in. Its great because you can add whatever else you want. Its really great in the summer because I've thrown in snap peas, zucchini etc... from my garden. Please note that the cook time is the chill time required. This is better if made the day before, and gets better the longer it chills.

This salad is a great way to get your kids to eat their vegetables. My kids love the chickpeas and the dressing, and they don't even notice the vegetables.

I'm not a big fan of chickpeas, but I really enjoyed this salad. The dressing is so good that it makes the chickpeas taste amazing.

This salad is a great way to use up leftover chickpeas. I always have a can or two in my pantry, so it's nice to have a recipe that I can use them in.

I was really excited to try this recipe, but I was disappointed with the results. The salad was bland and the dressing was too oily. I won't be making this again.
