SUMMER TORTELLINI SALAD image

Yield Makes 4-5 side servings

Number Of Ingredients 11

1 9 oz package fresh Cheese Tortellini
1 red pepper, diced
15 grape tomatoes, halved
1 6 oz jar marinated artichoke hearts, drained and coarsely chopped
1/2 tsp dried basil
1/8 tsp ground black pepper
Dressing:
3 Tbsp olive oil
2 Tbsp tarragon flavored vinegar
1/2 tsp dijon mustard with seeds
Grated parmesan cheese

Steps:

  • Cook tortellini according to package instructions. Drain and let cool slightly. In bowl combine tortellini, red pepper, tomatoes, artichoke hearts, dried basil and ground pepper. Combine dressing ingredients. Add to tortellini mixture and toss. Sprinkle with parmesan cheese and serve.
