A tart and fragrant rum refresher bursting with lime and pineapple juices and brightened by fresh strawberry. This cocktail gets nice foam on top without any eggwhite-the fresh pineapple froths up beautifully.

Yield Makes 1 cocktail

Number Of Ingredients 6

1 whole strawberry, leaves removed
1½ oz. BACARDÍ™ Reserva Ocho Rum
¾ oz. fresh pineapple juice
¾ oz. lime juice
½ oz. 1:1 simple syrup (see note)
Garnish: strawberry half

Steps:

  • At the bottom of a cocktail shaker, gently muddle the strawberry. Add the BACARDÍ™ Ocho, pineapple juice, lime juice, and simple syrup. Fill shaker with ice and shake until well chilled, about 15 seconds. Strain through a fine-mesh strainer into a coupe glass. Garnish with strawberry half.
