Summer Celery Soup image

This soup is light, delicious and so easy to make.

2 tablespoons olive oil
1 large onion, chopped
2 ½ cups chopped celery
2 small white potatoes, peeled and cubed
¼ cup red wine
2 tablespoons lemon juice
1 bay leaf
1 (32 ounce) carton chicken broth
1 teaspoon chopped fresh thyme
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
salt and pepper to taste

Steps:

  • Heat the olive oil in a large saucepan over medium-high heat. Stir in the onions, celery, and potatoes. Cook and stir until the onion has softened and turned translucent, about 10 minutes. Pour in the wine, lemon juice, and bay leaf. Bring to a boil over high heat and boil until the wine has reduced by half.
  • Pour in the chicken broth and bring to a boil. Reduce heat to medium-low, and simmer partially covered for 40 minutes until the vegetables are very tender. Remove the bay leaf and discard.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot. Once pureed, stir in the thyme, basil, and parsley. Return to a simmer over medium heat and cook for 5 minutes to infuse the flavor of the herbs. Season to taste with salt and pepper before serving.

Not a fan of this soup. The celery flavor was too overpowering and the soup was overall bland. I think it could have used more seasoning or maybe a different type of broth.

This soup was just okay. It wasn't bad, but it wasn't anything special either. I found the celery flavor to be a bit too strong for my taste. I think I would have preferred it if there had been more apple and onion.

Great recipe! The soup was creamy and flavorful. I used a mix of green and red celery, which gave it a nice color. I also added a pinch of cayenne pepper for a bit of spice. Will definitely make this again.

This soup was easy to make and turned out delicious! I used vegetable broth instead of chicken broth and it was still very flavorful. I also added a bit of chopped fresh parsley at the end for a pop of color and flavor. Highly recommend!
