Steps:
- Preheat oven to 375 degrees F.
- Scoop out pulp of zucchini and chop. Heat oil in medium saucepan over medium heat and cook zucchini pulp, stirring occasionally, until tender, about 2 minutes. Stir in water and Knorr® Fiesta Sides™ - Mexican Rice. Bring to a boil. Reduce heat to low and simmer covered 7 minutes or until rice is tender.
- Arrange zucchini on baking sheet. Evenly fill with rice mixture. Sprinkle with cheese. Bake 25 minutes or until zucchini are tender.
