Stuffed Green Peppers image

Number Of Ingredients 14

1/3 c uncooked regular long grain white rice
2/3 c water
4 large green bell peppers
1 lb ground beef
1/4 c chopped celery
2 Tbsp chopped onion
1/2 tsp salt
dash of pepper
1/4 c ketchup
1 medium tomato, chopped
1 8oz can tomato sauce
1 tsp sugar
1/4 tsp basil
1/4 c shredded cheddar or what ever cheese you like, i use a italian blend

Steps:

  • 1. Cook rice as directed on package.
  • 2. Meanwhile, preheat oven to 350 degrees. Cut tops off peppers and remove core and seeds. In a large sauce pot bring enough water to a boil to cover peppers. Add peppers, cook over medium heat for 5 minutes. Drain and set aside
  • 3. In a large skillet, combine beef celery and onion and cook 8-10 min. or till beef is cooked through. Stir frequently. Drain
  • 4. Add cooked rice, salt, pepper, ketchup and tomato, mix well. Spoon mixture into peppers. Put peppers in a ungreased shallow baking dish.
  • 5. In a small bowl, combine tomato sauce, sugar and basil, mix well. Spoon half of the sauce over peppers. Bake for 30-40 minutes or till peppers are tender, spoon remaining sauce over peppers and sprinkle with cheese during the last 5 minutes of baking.
