Stuffed Banana Peppers image

We had a bumper crop of peppers this year that were beautiful, so why not make stuffed peppers with a twist using banana peppers instead of bell peppers. You can adjust the recipe for more peppers if needed. I used quoina in my stuffing instead of rice, but you can use your choice. Hope you enjoy as much as we do! I show two...

  • 4. Carefully stuff meat mixture a teaspoon at a time and gently shove down with handle end of a wood spoon, all the way to the bottom before adding more meat, fill to the top of pepper.
  • 5. Lay peppers in appropriate sized baking dish, pour tomato sauce over peppers to cover and cover dish with foil. Bake for 1hr at 350, remove foil and sprinkle with shredded cheese, bake for an additional 30min or till peppers are tender but not falling apart. Enjoy!!!!

I give these peppers a 7 out of 10. They were good, but not great.

Not a fan. These peppers were too mushy for my liking.

I thought these peppers were just okay. The filling was a bit bland for my taste.

These peppers were a bit spicy for my taste, but my husband loved them. Next time I'll use a milder pepper.

So easy to make and so flavorful! I served these peppers with a side of rice and they were a perfect meal.

Delicious! I used ground turkey instead of beef and they were still amazing. I also added a little bit of chopped spinach to the filling for some extra greens.

I've made these peppers several times and they're always a crowd-pleaser. I love that they can be made ahead of time, so I can relax and enjoy my guests when they arrive.

These stuffed banana peppers were a hit at my last dinner party! The combination of flavors was perfect, and they were so easy to make. I will definitely be making them again.
