Add chocolate and beat until smooth. Fold in whipped cream mixture. Assemble trifle by layering pie filling, broken sugar cookies, white chocolate mousse, and whipped topping in a trifle bowl. Top with dollops of whipped cream. Refrigerate until ready to serve.
