2 cups all-purpose white flour
1/4 cup light brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup I Can't Believe It's Not Butter® Spread (melted)
1/4 cup skim milk
1 egg
1/2 teaspoon vanilla
4 ounces nonfat vanilla yogurt
12 teaspoons strawberry preserves (set aside)

Steps:

  • Preheat oven to 400º.
  • Grease or spray muffin tins.
  • Combine the dry ingredients in a large bowl.
  • Melt butter.
  • Add the milk, then beat in the egg and vanilla.
  • Stir in the yogurt.
  • Add this mixture to the flour mixture until moistened.
  • Fill the muffin cups halfway.
  • Put 1 teaspoon of preserves in the center of each muffin cup.
  • Fill the cups with the remaining batter.
  • Bake at 400º for 15 minutes.
