Strawberry Filled Oatmeal Bars image

I created this recipe one day after coming home from a long vacation and realizing that I didn't have any eggs with which to bake. I knew I had butter, sugar and old-fashioned oats on hand, so I started brainstorming on what I could create with those simple ingredients. 1/2 c light brown sugar - firmly packed
1/2 c salted butter - softened
1/2 tsp vanilla
1 c all purpose flour
1/4 tsp baking soda
1/8 tsp salt
1 c old fashioned oats
3/4 c strawberry jam

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Using cooking spray, grease one 9x9 inch pan. (You could also line with greased parchment paper.)
  • 3. In a mixer combine all ingredients except butter and strawberry jam until well combined.
  • 4. Mix in softened butter until you have a nice crumbly mixture.
  • 5. Press about 2/3 of the mixture (about 1 1/2 to 2 cups) into the bottom of the baking dish.
  • 6. Heat jam in the microwave (in a microwave safe dish) for about 20 seconds, then stir. This will make step seven MUCH easier.
  • 7. Spread the strawberry jam evenly over the top, allowing room for a small border of oats at the edge. (about 1/4 to 1/2 inch)
  • 8. Sprinkle the remaining oat mixture over the top.
  • 9. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.
