Steps:
- Pre-heat the oven to 350 degrees. Prepare two nine-inch cake pans with non-stick spray. Prepare cake as directed on the box, substituting the juice for the water. Pour the batter into the pans diving it evenly. Bake for about thirty minutes or until a toothpick inserted into the center comes out clean. While the cakes are baking, prepare the filling. Roughly chop the strawberries and place them in a small pot along with the water and sugar. Cook over medium-low heat stirring occasionally with a rubber spatula. When the strawberries begin to get soft, mash them with the spatula. At this point taste it to make sure it has enough sugar. Continue to cook until all of the strawberries are mashed, almost to a puree consistency. Set aside to cool. Cool the cakes completely and remove them from the pans. Remove the top, rounded portion of the cake by cutting it off of both cakes. Next, cut each cake into two horizontally. Place one porion of the cake on a plate. Spread on a thin layer of the strawberry mixture. Place the second layer of cake on the first. Spread on another thin layer of strawberries. Repeat with the third layer. Place the fourth layer on top, frost and garnish with fresh strawberries.
