Strawberry Banana Delight image

This recipe was found on a diabetic-friendly website on the internet. Preparation time does not include the 30 minutes or so needed for the dessert to set.

Number Of Ingredients 6

1 (3 ounce) package sugar-free strawberry gelatin
1 cup boiling water
6 ice cubes
2 bananas, broken into chunks (medium ripe)
4 tablespoons light whipped topping (other than Cool Whip)
4 fresh strawberries

Steps:

  • In a small bowl, dissolve gelatin n boiling water, then cool 10 minutes before adding enough water to the ice cubes to measure 1 cup.
  • Place gelatin & ice mixture in a blender, then cover & process for 1 minute or until ice cubes are melted.
  • Add bananas & process another 1 to 2 inutes longer or until blended.
  • Pour into 4 dessert dishes & refrigerate at least 30 minutes or until set, Then garnish each with a tablespoon of the whipped topping & a strawberry.
