Spinach Squares (Cook's Country) Recipe - (3.4/5) image

Number Of Ingredients 12

1 cup plus 2 TBL flour
1 tsp baking powder
3/4 tsp salt
1/2 tsp pepper
1/4 tsp cayenne
1 c low-sodium chicken broth
3 large eggs
1 1/4 lbs. frozen chopped spinach, thawed and squeezed dry
12 oz. Gruyere cheese, shreddded (3 cups)
1 onion, chopped fine
2 garlic cloves, minced
1 oz. Parmesan cheese, grated (1/2 cup)

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 375°. Spray 13 x 9 baking dish with oil spray. Whisk flour, baking powder, salt, pepper, and cayenne together in bowl. Add broth and eggs and whisk until smooth. Stir in spinach, Gruyere, onion, and garlic until combined. Transfer mixture to prepared baking dish and sprinkle with Parmesan. Bake until browned on top and bubbling around edges, 40-45 minutes. Let cool in pan for 20 minutes. Cut into 32 squares. Serve warm.
