Spinach Salad with Warm

This is a vegetarian version of this salad. If you prefer, you can use bacon grease and crumbled bacon in place of the vegetable oil and "bacon" bits.

4 oz baby spinach leaves
4 mushrooms, sliced
onion, thinly sliced
tomato, thinly sliced
2 eggs, hard boiled and sliced
1 Tbsp sunflower seeds, optional
WARM "BACON " DRESSING
3 Tbsp vegetable oil
2 tsp "bacon" bits (i use a vegetarian brand of artificial bacon bits)
2 Tbsp red wine vinegar
1 Tbsp sugar
1/2 tsp dijon mustard
pinch each, salt and pepper

Steps:

  • 1. Divide spinach, mushrooms, onion, tomatoes, and sunflower seeds between 2 plates. Top with sliced eggs
  • 2. Place oil and "bacon" bits in a microwave safe measuring cup. Microwave 20 - 30 seconds, just until warm. Whisk in vinegar, sugar, dijon mustard. Season with salt and pepper.
  • 3. Drizzle warm dressing over salads and serve immediately.
