Spinach Salad With Sweet and Sour Dressing image

One of my favorite salads. Creamy sweet-tart dressing clings easily to spinach, oranges, and red onions. I use baby spinach. You can use canned mandarin oranges, but I like the fresh oranges. Very colorful, great for a special occasion or everyday healthy treat. Everyone loves it. From Sunset Recipe Annual 1988 Edition.

This salad is perfect for a light lunch or dinner. It's filling and satisfying, but it won't weigh you down. I often make it for myself when I'm trying to eat healthier.

I'm not a huge fan of spinach, but this salad changed my mind. The sweet and sour dressing really helps to balance out the bitterness of the spinach. I actually found myself craving this salad after I finished it.
