I'm not a huge fan of beets, but I loved them in this salad. The sweetness of the beets balanced out the tanginess of the goat cheese perfectly.

This salad was a hit at my dinner party! The combination of flavors and textures was perfect. The goat cheese added a creamy tanginess, while the beets added a sweet earthiness. The spinach provided a nice base for the other ingredients.
