Steps:
- 1. Combine crushed croutons and melted butter; stirring well. Firmly press the crumb mixture evenly on the bottom and up the sides of a 9-inch pie plate; set aside.
- 2. Combine the spinach and the next 8 ingredients, stirring well. Spoon the spinach mixture into the prepared crust.
- 3. Bake, uncovered at 350 degrees for 35 minutes or until set and lightly browned. Remove from the oven, and sprinkle with 2 tablespoons Parmesan cheese. Let stand 5 minutes before serving.
