Spinach Pie Parma image

This is a good brunch dish. Easy to make because the ingredients are usually things you have on hand.

Number Of Ingredients 12

2 c commercial seasoned croutons, crushed
1/4 c butter, melted
10 oz package frozen chopped spinach, thawed and drained
1 c small-curd cottage cheese
4 oz monterey jack cheese, cubed
1/4 c parmesan cheese, grated
1/4 c onion, chopped
3 eggs, beaten
2 Tbsp sour cream
1 clove garlic, minced
1/2 tsp salt
2 Tbsp parmesan cheese, grated

Steps:

  • 1. Combine crushed croutons and melted butter; stirring well. Firmly press the crumb mixture evenly on the bottom and up the sides of a 9-inch pie plate; set aside.
  • 2. Combine the spinach and the next 8 ingredients, stirring well. Spoon the spinach mixture into the prepared crust.
  • 3. Bake, uncovered at 350 degrees for 35 minutes or until set and lightly browned. Remove from the oven, and sprinkle with 2 tablespoons Parmesan cheese. Let stand 5 minutes before serving.
