Spinach & Kiwi Salad image

I have a spinach with strawberry salad that I wanted to make, but only had a kiwi, so I came up with this. DH volunteered that he loved the fruit in the salad, so thought I'd post this substitution-variation!

Number Of Ingredients 6

2 1/2 oz fresh spinach leaves (cleaned)
1 large kiwi
1/4 c shredded carrot
1 Tbsp chopped red onion
1 Tbsp sliced almonds (can substitute pine nuts )
2 Tbsp commercial poppyseed dressing (or to taste)

Steps:

  • 1. Put spinach in serving bowl.
  • 2. Peel and slice kiwi; cut each slice in fourths. Add to spinach.
  • 3. Add carrots, red onion and almonds. Pour on poppy seed dressing to taste. Toss and serve.
