Steps:
- Warm the corn tortillas in the microwave until soft. Meanwhile take remaining ingredients and place in the food processor. Blend until slightly chunky and start spooning into the tortillas. Add the enchilada sauce and top with some extra cheese if you so desire. I also top with olives if I have them around. Preheat the oven to 350 and then bake at 350 for 30 minutes or until cheese is melted on top. Then add any additional toppings you may want (tomatoes, green onion, peppers, etc)
