SPINACH BALLS image

Yield As appetizers, makes about 18.

Number Of Ingredients 6

2 8-oz packages of frozen chopped spinach, thawed and sqeezed until dry. Sqeezing until dry is very immportant!
1 cup minced sweet onion.
1/2-3/4 cup grated Parmesean cheese.
1/4 stick of butter, melted.
4 eggs.
2 cups of croutons (the smaller size, NOT the larger Restaurant style; seasoned or not, your choice).

Steps:

  • Beat the eggs by hand in a mixing bowl. Stir in the onion, cheese and melted butter. Stir in the spinach next. Add the croutons and stir until moiste. Let the mixture sit for 15 minutes. Coat a cookie sheet or 13x9 inch pan with cooking spray. Form the mixture into golf-ball size balls and place in pan, not touching. Recipe makes about 18 spinach balls. Bake at 350 degress for 25-30 minutes until slightly brown. Enjoy hot, warm or at room temperature. These are also excellent reheated the next day.
