SPINACH ARTICHOKE DIP ! image

THIS DIP IS GREAT COLD OR HOT! EASY TO MAKE... EVEN EASIER TO EAT! THE ENTIRE FAMILY LOVES THIS ONE! This makes a large batch which is great to take to parties and pot luck dinners. PLAY WITH YOUR FOODS!

CREAMED PART OF DIP
2 pkg (8 ounces each) cream cheese (room temperature)
1/2 c sour cream
1 pkg ranch dip mix
1/2 tsp each: cayenne pepper and white pepper
4 Tbsp liquid from artichoke can (more or less depending on what consistancy you like)
1 tsp lemon juice, fresh
FOLDED PART OF DIP
1/2 c asiago cheese (grated)
1/2 c provolone cheese (grated)
1 box frozen spinach (thawed, drained, squeezed and chopped)
1 can(s) (14 ounces) marinated artichokes (drained, save some liquid as needed)
1 can(s) sliced water chestnuts (chopped large)

Steps:

  • 1. Cream together the creamed part of dip ingredients.
  • 2. Fold in the remaining ingredients. Put in microwaveable yet pretty bowl. Refrigerate until needed.
  • 3. If you wish to serve as a cold dip... go ahead. If you wish to serve as a warm dip... microwave on high for about 2 minutes (depending on your microwave). Stir a couple of times. Garnish with a pretty red grape tomato.
  • 4. To serve: place in center of plate or platter surrounded by crackers and or garlic toasts. Or, make crustinies with the warm dip spread on them and put on a platter. How ever you serve it... it is great! *** This recipe makes enough dip to keep everyone happy!
