Spicy-Sweet BBQ Pinto Beans image

A nice "southwestern" touch to regular pinto beans. Feel free to spice them up with additional hot sauce or jalapenos. A great bbq side dish. *Prep time does not include soaking the beans overnight.

1 lb dried pinto beans
5 c water (or more as needed)
1 onion, chopped
6 clove garlic, chopped
1 bay leaf
3/4 c ketsup
6 Tbsp dark brown sugar (packed)
5 Tbsp yellow mustard
2 Tbsp chili powder
2 Tbsp worchestershire sauce
1 Tbsp paprika
hot pepper sauce to taste
1 1/2 tsp dried thyme

Steps:

  • 1. Place beans in a dutch oven with enough water to cover the beans by 3 inches and let soak overnight.
  • 2. Drain beans and return them to the pot. Add 5 cups of water, chopped onion, garlic, and the bay leaf to the pot. Bring to a boil and cook until just tender, stirring occasionally - approx. 1 hour.
  • 3. Stir in remaining ingredients and simmer until beans are very tender and flavors have blended well - approx. 30 minutes. Season to taste with salt and pepper.
