SPICY ITALIAN RED BEANS AND RICE image

Number Of Ingredients 10

8 ounces Italian Sausage (hot or sweet), removed from casing
1/2 C. Chopped Onion
1/2 C. Each chopped green & red bell pepper
2 tsps. minced garlic
1 Can red kidney beans, undrained
1 Can pinto beans, undrained
1 can (11 1/8 ounces) condensed Italian tomato soup
1/2 cup salsa (mild or hot)
5 C. hot cooked rice
1/4 cup sliced Scallions

Steps:

  • 1. Brown sausage in a large skillet over medium-high heat, breaking up chunks. Drain off Fat. 2. Add onion, green and red pepper and garlic. Cook 8 minutes or until vegetables are tender. 3. Stir in beans, soup and salsa. Reduce heat to low and simmer 15 minutes, stirring occasionally, until hot and flavors have blended. 4. Spoon over rice. Top with Scallions.
