Yield 6 side dishes or 2 main course salads

Number Of Ingredients 15

Dressing
2/3 cup rice vinegar
1/4 cup sugar
1 Tbs. salt
1 tsp. to 1 Tbs. chili garlic sauce, depending on desired hotness
2 Tbs. vegetable oil
Salad
2 cucumbers, (peeled, halved lengthwise, seeds scooped out, and chopped)
2 cups Napa or other oriental cabbage, thinly sliced or shredded
1 medium-size red onion, finely chopped
1/2 cup chopped cilantro
1/4 cup chopped parsley (curly or flat-leaf)
1/4 cup chopped mint leaves (optional)
Garnish
3/4 cup or more dry roasted UNSALTED peanuts, lightly crushed (I use the ones I buy at the grocery in a jar)

Steps:

  • Dressing-- Mix all ingredients together and taste to adjust seasoning. The goal is to have a balance of sweet, salty, and sour (vinegar), plus some hot (chile garlic sauce) to taste. Finish--Toss salad ingredients together and then toss with dressing, starting with about 1/2 the dressing. Add more dressing as desired. Just before serving sprinkle peanuts on top.

This salad is just okay. The dressing is a bit too spicy for my taste and the vegetables are not very flavorful.

This salad is a great way to use up leftover vegetables. I used a mix of broccoli, carrots, and snap peas and it was delicious. The dressing is also very versatile. I've used it on grilled chicken and fish and it's always a hit.
