Here's my modified version of a recipe from a 1970 "Favorite Recipes from Women of the Christian Church Casseroles" Cookbook. This bread has been a hit every time I bring it to a gathering.

Time 1h15m

Yield 2 loaves, 32 serving(s)

Number Of Ingredients 12

2/3 cup butter (softened at room temperature)
3 cups sugar
1 3/4 cups cooked pumpkin
4 eggs (beaten)
2/3 cup water
2 cups spelt flour
1 1/2 cups rice flour (brown & white blend)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon clove
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Grease two 8½" x 4½" x 2½" loaf pans -- I use the butter wrapper to do this.
  • Sift dry ingredients together and set aside.
  • Cream sugar and butter until fluffy.
  • Add pumpkin, eggs and water. Beat at low speed until well mixed.
  • Add dry ingredients and mix just until well blended.
  • Pour into loaf pans.
  • Bake for about 1 hour or until toothpick comes out clean.

I'm allergic to nuts, so I substituted sunflower seed butter for the almond butter. It turned out great!

This bread is a little too sweet for my taste.

I'm not sure what I did wrong, but my bread turned out dry and crumbly. Maybe I overmixed the batter?

I'm not a huge fan of pumpkin bread, but this one was actually really good. It was moist and flavorful, and the spelt flour gave it a nice nutty flavor.

This bread was a disappointment. It was dry and crumbly, and the flavor was bland. I followed the recipe exactly, so I'm not sure what went wrong. Maybe I used the wrong type of spelt flour?

I've made this spelt pumpkin bread twice now, and it's quickly become a favorite. It's so moist and flavorful, and the spelt flour gives it a nice nutty flavor. I love that it's also a healthier alternative to traditional pumpkin bread. Highly recomm

This spelt pumpkin bread turned out amazing! The texture was moist and fluffy, and the flavor was perfectly balanced between sweet and savory. I followed the recipe exactly, and it was easy to make. Will definitely be making this again!
