Spanish rice in the pressure cooker.

Number Of Ingredients 9

2 cups uncooked instant long-grain rice (such as Uncle Ben's®)
1 (14.5 ounce) can diced tomatoes with green chilies (such as RO*TEL®)
1 ¾ cups water, or more as needed
1 large onion, chopped
1 small green bell pepper, chopped
¼ cup salsa
1 ½ teaspoons garlic powder
½ teaspoon chili powder, or to taste
salt and pepper to taste

Steps:

  • Combine rice, diced tomatoes, water, onion, green bell pepper, salsa, garlic powder, chili powder, salt, and pepper in a multi-functional pressure cooker. Close and lock the lid. Select the Rice function according to manufacturer's instructions; cook until rice is tender and flavors are blended, about 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
