Since both my SO and I both really enjoy SPAM© and Velveeta©.And since he's on a low-carb diet, and I'm not I wanted to try to come up with something that we both would like.And this recipe seemed to hit the spot for both of us.And since this has both the SPAM and Velveeta, I also decided to call it "Redneck Quiche".To make...

Number Of Ingredients 7

6 large eggs
1/2 c milk
1/2 tsp each of dried basil,garlic powder and ground black pepper
1/4 tsp dry mustard
1/4 c finely chopped sweet onion
6 oz spam, cut into small cubes
6 oz velveeta,cut into small cubes

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Spray deep dish pie plate with cooking spray,set aside.
  • 3. Mix together eggs,milk,dry mustard,all seasonings,and onions in a large mixing bowl.
  • 4. Pour egg mixture into prepared pie plate,sprinkle Spam and Velveeta evenly over eggs.
  • 5. Bake for 40 minutes until middle puffs up and center is firm.
  • 6. Check for doneness by inserting knife near the middle of the quiche.
  • 7. Let sit for 10 minutes.
