Southwestern Couscous image

Never cared to much for Couscous until I tried this one.Quick,easy and yummy.

Number Of Ingredients 9

1 cup water
i/2 tsp salt
3/4 cup couscous
2 1/2 Tbsp fresh lime juice
1 1/2 Tbsp olive oil
1/2 tsp ground cumin
1/2 c rinsed and drained can black beans
1/2 c chopped tomato
1/3 c chopped fresh cilantro

Steps:

  • 1. Bring 1 cup water and salt to a boil in a medium saucepan,gradually stir in couscous.Remove from heat,cover and let stand 5 minutes. Fluff with a fork.
  • 2. While couscous stands,combine lime juice,olive oil and cumin in a large bowl,stir with a whisk. Stir in beans and next 3 ingredients. Add Couscous,toss gently with a fork and serve

This recipe is just okay. It's not bad, but it's not amazing either.

I followed the recipe exactly and the couscous turned out really dry. I had to add more liquid to make it edible.
