We love these little treasures and when it's time for these beauties this recipe becomes our lunch and dinner for at least a couple weeks until we've had our fill for the following season. Our youngest son enjoys these right along with us. These are with a little southern twist on them.

Steps:
- 1. Salt and pepper the tomato slices, dust lightly with flour.
- 2. Dip slices in beaten egg, letting excess drip off, then coat well with cornmeal or crumbs.
- 3. Fry in hot grease or oil until browned, preferably in cast iron pan, turning gently (about 3 minutes each side). Keep warm in a low 200 degree oven if frying in batches.
