My family and I are not bell pepper eaters, but I always tell my daughters to try things you don't like cooked/prepared differently you may be suprised, and we were all suprised when I took a southwest twisted to stuffed peppers. 4 red bell peppers
1 lb ground pork
1 can(s) rinsed black beans
1/2 can(s) corn
1 can(s) tomatoes, fire roasted
2 Tbsp tomatoe paste
salt and pepper
garlic powder
1 1/2 tsp taco seasoning mix
2 cups cooked rice
1 cup shredded cheese (4 cheeseblend)
1 medium onion chiped

Steps:

  • 1. Pre-heat oven to 350.
  • 2. In large skillet, brown ground pork, add seasonings (to taste). Add chopped onion. Drain meat if needed. Add tomatoes,tomatoe paste, black beans, corn, cooked rice, cheese.
  • 3. wash and cut peppers in half, stuff peppers with meat mixture, pack in filling. Place stuffed peppers in oven for about 20-25 covered then remove foil and bake another 10 mins. Peppers are finished when teneder.
