South African Indian Butternut Stew image

This is very easy and cooking time is mostly simmering. This is a great way to use lamb but you could also use pork or beef. The flavors (hot and sweet)of this are just great. I got this from a cookbook " A Taste of South Africa"

Number Of Ingredients 12

2 tablespoons olive oil
2 large onions (Sliced )
3 garlic cloves (Chopped )
1 large jalapeno (Chopped )
2 lbs lamb (Chopped )
salt and pepper (To Taste )
1/2 cup dry red wine
3 medium potatoes (Sliced )
1 medium butternut squash (Chopped )
1/2 teaspoon gingerroot (Chopped )
2 teaspoons brown sugar
1 teaspoon cinnamon

Steps:

  • Saute onions, garlic, jalapeno, and meat in oil for 10 minutes.
  • Add salt, pepper and wine, cover, simmer 10 minutes.
  • Add remainig ingredients,
  • Cover, simmer 30 minutes.
  • Serve over rice, noodles or rolled up in pita bread.
