South African Indian Butternut Stew image

This is very easy and cooking time is mostly simmering. This is a great way to use lamb but you could also use pork or beef. The flavors (hot and sweet)of this are just great. I got this from a cookbook " A Taste of South Africa"

I'm not a fan of coconut milk, but I found that the flavor was very subtle in this stew. It didn't overpower the other flavors.

The spices in this stew are perfectly balanced. It's not too spicy, but it has just enough heat to keep things interesting.
