SMOTHERED OKRA OR (okra gumbo ) image

I LOVE OKRA AND THIS IS A SIMPLE RECIPE

1/2 16 oz. package frozen okra ,cut up
8 oz fresh mushrooms ,sliced
1 14 oz.can diced tomatoes with juice
1 6 oz. can tomato paste
1 tsp file powder
2 bay leaves
1 tsp salt
1 tsp ground blk pepper
2 Tbsp vegetable oil
1 Tbsp vegetable oil
2 Tbsp flour
1 clove garlic, minced
1 medium onion, finely chopped
1 medium bell pepper, finely chopped
cooked rice

Steps:

  • 1. heat 1 t. oil in a large skillet over med heat, stir in garlic, bell pepper ,and onion, saute until tender.stir in okra, mushrooms,diced tomatoes with juice,tomato paste, file,salt & pepper and bay leaf. cook ,stirring occasionally,for 45 min.
  • 2. heat 2 T.oil in a med skillet over med. heat ,stirring constantly,add flour, and cook 2 to 5 min. until golden roux has formed.
  • 3. spoon roux into the okra mixture, and continue to cook, stirring occasionally for 5 to 10 until thickened. serve with rice
