Smoked Turkey Cobb Sandwich with Blue Cheese Mayo image

Another unique recipe from Wisconsin: You won't believe your taste buds when you bite into this delicious sandwich with the yummy avocado, blue cheese, turkey,bacon on a sourdough bread !

BLUE CHEESE MAYO:
1/4 c blue cheese
1/4 c mayonnaise
AVOCADO PUREE:
1 c pureed avocado
salt and pepper to taste
1/4 tsp lemon juice
SANDWICH:
8 slice sourdough bread, sliced thin
2 oz mixed greens
8 slice red ripe tomato
8 oz smoked turkey, sliced
8 slice bacon, fried crisp

Steps:

  • 1. Blue Cheese Mayo: Combine the cheese and mayonnaise in a small bowl, and mix well. --- Avocado Puree: Mix the avocado puree, salt and pepper, and lemon juice until well-blended. --- To assemble Sandwich: Spread one bread slice with 1 to 2 Tablespoons of the blue cheese mayonnaise. Layer the mixed greens, 2 tomato slices, 2 ounces smoked turkey, and 2 bacon slices on the bread. Spread another slice of the bread with the avocado puree, and top the other half of the sandwich. Repeat using all ingredients.
