Number Of Ingredients 10

1 cup buckwheat flour
1 cup all-purpose flour
1 pinch salt
1 tablespoon fast rise yeast
2 eggs
1 1/2 cups milk, warm
2 tablespoons unsalted butter, melted

3 tablespoons fresh dill, chopped
8 ounces smoked salmon, thinly sliced

Steps:

  • In large bowl, mix together buckwheat & all-purpose flour with salt.

  • Separate yolk & white of ONE egg, then set white aside, reserved.
  • Whisk together remaining whole egg AND yolk of first egg, along with warm milk & 1 tablespoon melted butter.
  • Pour egg mixture onto flour mixture & beat well to form smooth batter. Cover with plastic wrap & let rise in warm place 1-2 hours.

I'm not sure if I did something wrong, but my blinis turned out really dry. I think I might have overcooked them.

These blinis are a great way to use up leftover smoked salmon. They're also a good make-ahead appetizer.

Overall, I thought these blinis were just okay. They weren't bad, but they weren't anything special either.

I had some trouble flipping the blinis in the pan. They kept breaking. I think I need more practice.

These blinis were a bit too bland for my taste. I think I'll add some more salt and pepper next time.

I was a bit hesitant to try this recipe because I'm not a big fan of smoked salmon. But I'm glad I did! The blinis were delicious, and the smoked salmon flavor was subtle and not overpowering.
