Slow-Cooker White-Bean Soup image

There's butternut squash, leeks, and spinach as well as white beans in this hearty, rich, and flavorful vegetarian soup. It's a recipe that proves the slow cooker is as well suited to vegetable recipes as to big pieces of meat.

This soup is just okay. It's not bad, but it's not great either. I think it needs more flavor. I might try adding some more spices next time.

This soup is a great way to use up leftover beans. I always have a can or two of beans in my pantry, so this is a great way to use them up. The soup is also really versatile. You can add different vegetables, meats, or spices to change up the flavor.

This soup is amazing! I've made it twice now and it's always a hit. The flavors are so rich and satisfying, and the beans are perfectly tender. I love that it's so easy to make, too. Just throw everything in the slow cooker and let it do its thing.
