This stew is a great make-ahead meal. I made it on the weekend and then reheated it for dinner during the week.

I'm not a big fan of cilantro, so I left it out of the stew. It was still very good.

This stew is a great way to use up leftover beef. I always have some leftover beef from my Sunday roast, and this is the perfect way to use it up.

This stew was a little too salty for my taste, but I still enjoyed it. I would recommend using less salt if you're not a fan of salty food.
