I'm not a huge fan of lamb, but I really enjoyed this tagine. The apricots and olives helped to balance out the gaminess of the lamb and the slow cooking made it very tender.

This tagine is a great way to use up leftover lamb. I had some leftover from a roast lamb dinner and this tagine was the perfect way to use it up.

I love the slow cooker version of this tagine. It's so easy to just throw everything in the slow cooker and let it cook all day. I always have dinner ready when I get home from work.

This tagine is a great make-ahead meal. I made it the night before and then reheated it for dinner the next day. It was just as good the second time around.

This tagine was a hit with my family! The lamb was fall-off-the-bone tender and the apricots and olives added a delicious sweetness and tang. I served it over couscous and everyone went back for seconds.
