Slow Cooker Jambalaya (Vegan) image

A good meal to freeze and throw in the slow cooker on a busy day. I prefer the rice cooked separately. You can substitute Creole seasoning for the Cajun seasoning and bok choy for the celery, if desired.

I'm not sure about this recipe. It looks a bit too spicy for my taste.

This jambalaya is a great way to use up leftover rice. I had some leftover brown rice from a previous meal, and it worked perfectly in this recipe. The dish was flavorful and filling, and it was a great way to get my daily dose of vegetables.

This recipe was easy to follow and the jambalaya turned out great! I used brown rice instead of white rice, and it was still delicious. The flavors were well-balanced and the dish was not too spicy.

I made this jambalaya last night and it was a hit with my family! The veggies were tender and flavorful, and the rice was cooked perfectly. I especially loved the addition of the okra, which gave the dish a nice slimy texture.
