Slow Cooker Chicken Provencal image

An easy to make, healthy, delicious dinner.

Number Of Ingredients 14

2 lb boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 red bell pepper, diced
1 yellow bell pepper, diced
1 onion, diced
1 can(s) (16 ounces) cannellini beans, rinsed and drained
1 can(s) (14 ounces) crushed or diced tomatoes
2 cloves garlic, crushed
2 Tbsp extra virgin olive oil
1 tsp oregano
1 tsp basil
1/2 tsp dried thyme (chopped) optional
kosher salt
freshly ground pepper
2 Tbsp brown sugar (optional)

Steps:

  • 1. Place all ingredients into a slow cooker, stir and cover with lid. Cook on low heat for 7 hours.
  • 2. Recipe can be doubled for a 5, 6 or 7 quart crock pot.
