SLICE OF HEAVEN DATE CAKE image

Brandy Tart:
1 cup pitted chopped dates
1 cup boiling water
1 t baking soda
1 cup sugar
2 1/2 T soft butter
1 1/2 cups flour
1 egg
pinch of salt
3 t baking powder
1/2 cup chopped nuts
Sauce:
1/2 cup sugar
1/4 cup cold water
1/2 t butter
1 cup brandy or rum
1/2 t vanilla

Steps:

  • Preheat oven to 350°. Place dates in small bowl. Pour in water, then add baking soda. Let dates stand for 10 minutes or until soft. In large bowl, combine butter and sugar and beat until creamy. Beat in egg. Sift in flour, salt, baking powder. Add dates, water, and nuts. Mix well. Grease 9" pie plate. Pour in batter and bake 45 minutes. Before serving, remnove from pie plate and allow to cool slightly.

This cake is a little too sweet for my taste, but it's still very good. I think next time I'll use less sugar or add some tart fruit, like cranberries or cherries.
