Skillet Potatoes with Pesto and Shrimp image

This is a very easy and tasty recipe! One pan, a few ingredients, 30 minutes, and you're done! Its very hearty also. The flavors go together nicely. I think of it as an Italian version of fish and chips!

Number Of Ingredients 5

2 large potatoes - washed, peeled and thinly chopped
3 or 4 Tbsp olive oil, extra virgin
salt and pepper to taste
1/3 c pesto
1/2 lb large shrimp - 31 - 40 count size - cleaned and peeled

Steps:

  • 1. Heat oil in a large skillet on med/high heat
  • 2. Sprinkle potatoes with salt and pepper.
  • 3. Add potatoes to skillet and cook til tender, stirring frequently.
  • 4. Add shrimp and cook til shrimp is opaque. Then add pesto and toss to coat.
  • 5. Cook for about 1 minute to heat pesto.
  • 6. Taste and add more salt and pepper if needed.
  • 7. Serve warm.
